Start with this one so you get the full impact of Katniss's relationship with her hunting buddy Gale. Then read the second one and you will see that Catching Fire is all about the love triangle between Katniss, Peeta, and Gale, an undercurrent which the movie missed. I haven't seen the third movie yet, but I'm sure the third book far exceeds it, too.
